Engaging routes into/out of Birmingham

As we all know, part of the fun of a road trip is staying off the interstates and taking the time to enjoy the more entertaining smaller roads. As part of that quest, I propose we compile a list of requests for and suggestions of tasty byways, stops along such paths, great diners, etc., for folks to incorporate into their travel plans. I know that several scenic drives are already planned around Birmingham.

I'm looking more for interesting longer-range ideas.

For example, I'm driving from Dallas to Birmingham and have no idea what there is to see in northern Louisiana or Mississippi. I would welcome suggestions.

Try looking at MotorcycleRoads.US. Click on what state you are interested in and it will give you interesting roads that have been submitted by motorcyclists. They often include good places to eat as well.
