As a new owner, how do I know if my car has the twin oil coolers?

Look in the lower outside front grill. You will see one on the right (looking at the car) and then look in the left to see if you have the second.

Drop the panel under the engine and look at the plate that holds the oil filter. Cars with coolers will have two black hoses attached to the plate. One goes to the left and the other to the right up through the chassis and on to the coolers. You can also look into the air inlets on the nose (to the left and right of the center inlet for the radiator). On my car (has coolers) you can see the black painted coolers.

What cars come with oil coolers, I mean why is it an option or how are they ordered.

All the sport pack cars come with a 2nd oil cooler. The early base cars (those produced before early 2005, I think) also came with 2 coolers.

According to the Elise Parts Manual this is the status of dual oil coolers:

SINGLE OIL COOLER FITTED TO 05’
MODEL YEAR ELISE FROM VIN SERIAL
NUMBER 32444
FOR FULL EXPLANATION PLEASE REFER
TO TECHNICAL SERVICE BULLETIN 2005/05

Early 05' Elises have twin coolers... my chassis #222 has them. But for later units easiest way is just look thru the front cooler intakes...you can see the cooler(2) very clearer if the second one exists.

All cars have those two lines. One is the supply line and the other is the return line. Cars with only one cooler have a bypass hose in place of the missing cooler.

any idea how a 2nd changes the temperature? has anyone installed a 3rd?

I believe all Exiges have dual coolers 'cause Sport Pack is standard for them.

The water temp shows about 15 degrees difference when I compared my car's temp reading with someone's with dual coolers. This is on a track.
