I have it working just fine, but I don't really know how to use it to make a log of my car.

Anyone know?

I would like to save a log of all the engine parameters while it's working well so I will have numbers to compare if the car ever starts running poorly.

A lot depends on what software and scanner you are using. Some cannot create a log file of the operating parameters. You can always go into each and write it down on a piece of paper and then write it into a file on your computer. The manual tells you what the expected range is for each value.

I have the specific Lotus OBDII V8 Esprit software that a dude in the UK wrote years ago with support from the factory.

The problem is he didn't bother to document it, and he's out of the game. So I am looking for someone that has intimate knowledge of this software.

Everyone can simmer down now -- I figured it out. There's a little check box at the bottom left of the ODB Data tab that says "Log to:" and then you select the file location.
