Possibly.. Usually the problem with off-the-shelf seats is that they are too wide at shoulder level, so two seats won't fit side-by-side.
Sometimes you can get away with it by bolting the passenger seat as far backward as possible and bolting the driver's seat forward, so the shoulder area can 'overlap' a little on the seats.
Depends on how bad the overlap is if this is feasible or not (passenger sitting in seat hitting the driver's seat and such..)
This is why the official Lotus/Corbeau motorsport seat can only be used for the driver. In this case the passenger retains the normal seat and it's just re-trimmed in the same fabric and materials.
Specific aftermarket seats (like the CF jobbies seen here on the site) address this problem by being slightly more narrow at the top, so 2 seats will fit side by side.
No doubt there will be other seats 'out there' that can fit. It's just a matter of finding them and doing some trial-fitting..
