My understanding is the parking lot used for C&C belongs to Mazda. And the change of ownership with the Ford/PAG building should not impact the show.

Time will tell I guess.

I've never been to the Cars & Coffee website before, but the "Irvine" location on their map is not (or is no longer) a link...no press release about it, but that can't bode terribly well for the event.
